Preheat the oven to 180°C.
Brunoise the tomatoes, courgette and onion.
Cut out 4 discs of shortcrust pastry.
Arrange the vegetables on top.
Bake.
Halfway through cooking, arrange the Goat Cheese slices over the top.
Take out of the oven.
Sprinkle with pine nuts and fennel seeds.
Arrange on 4 plates.
